Apricot Chicken Thighs
Wonderfully Warming Comfort Food
Ingredients:
- 4 chicken thighs (deboned)
- ½ cup apricot preserves
- ¼ cup soy sauce
- 1 clove garlic, chopped
- 2 tbsp olive oil
- Green onions sliced thinly
- ¾ cup Cashews, crushed
- Kilombero Rice to serve
Method:
- In a bowl, add chicken thighs with all the other ingredients to marinate for 1 hour or more. The longer you marinate, the richer the flavour. Do not marinate for more than 8 hours though.
- Preheat oven to 190°C (375°F).
- In a cast iron pan, heat 2 tbsp of olive oil (separate from recipe) and add chicken thighs once heated and sear for 6 minutes on both sides and has a golden brown colour.
- Transfer to the oven to bake for 20 minutes until chicken is cooked through.
- Take out of the oven and transfer to plate with rice and green beans.
- Make Kilombero Rice as per the packet instructions and serve with the Apricot Chicken Thighs.
- Add a sprinkling crushed cashew nuts to garnish and enjoy
