Cashew Cinnamon Rolls
Super easy but oh so delicious!
Ingredients:
- 1 sheet ready-rolled puff pastry
- 2–3 tbsp cashew butter
- 2-3 tbsp orange and cinnamon marmalade
- 3 tbsp soft brown sugar
- 1–2 tsp cinnamon
- 1 handful chopped cashews
- 1 egg (beaten, for brushing)
For the drizzle:
- 2 tbsp cashew butter
- 1–2 tbsp milk (to loosen)
- 1 tbsp icing sugar (optional, for sweetness)
- Extra chopped cashews (to finish)
Method:
- Preheat oven to 200°C (180°C fan) and line a tray with baking paper. Unroll your puff pastry onto a lightly floured surface.
- Mix the brown sugar and cinnamon together. Spread the cashew butter and the orange and cinnamon marmalade over the pastry, then sprinkle over the cinnamon sugar and chopped cashews.
- Roll the pastry tightly into a log, then slice into even rolls (about 8 pieces).
- Place on your tray (slightly touching), brush with egg wash, and bake for 15–18 minutes until golden and puffed.
- Mix cashew butter with milk (and icing sugar if using) until smooth and pourable.
- Drizzle over warm rolls and sprinkle with extra chopped cashews.
