Cashew Satay Dressing
Drizzle over noodle salads, roasted veg, or use as a dipping sauce
Ingredients:
- Soy sauce
- Lime juice
- Red wine vinegar
- Warm water
- Honey
- Cashew nut butter
- Cayenne pepper
- Cashew nuts, roughly chopped (to garnish
Method:
- In a bowl or jar, whisk together the cashew nut butter and warm water until smooth and pourable.
- Add soy sauce, lime juice, and red wine vinegar, stirring well to combine.
- Drizzle in the honey and whisk until the dressing is balanced and slightly sweet.
- Add a pinch of cayenne pepper for gentle heat (adjust to taste).
- Taste and adjust—more lime for freshness, honey for sweetness, or water to thin.
- Pour over your favourite salad and toss to coat.
- Finish with a sprinkle of chopped cashew nuts for crunch.
