Chicken Curry with Kilombero Rice
Can be adapted to suit a vegan diet by replacing the chicken with sweet potato
Ingredients can be increased to make more portions
Ingredients:
- 1 x large onion
- 2 x peppers (colours of your choice)
- Tin chopped tomatoes
- 2 x chicken breasts
- ½ jar Cape Curry Red Curry Paste
- 1 serving Kilombero Rice
Method:
- Gently fry the chicken until cooked through then set aside to rest
- Fry the onion and pepper until soft then add the tin of chopped tomatoes and half a jar of red curry paste
- Slice the chicken breasts and add to the curry sauce, mix together and heat gently until everything is cooked through
- Cook the Kilombero rice as per the packet instructions and serve with the chicken curry
