Chicken Enchilladas

A trusted family favourite

Ingredients:
  • 4 Chicken Breasts
  • 1 large onion
  • 1 or 2 green or red peppers
  • 1 oz Zaytoun Olive Oil
  • Fajita seasoning of your choice
  • Packet of tortillas
  • 1 jar Tomato and Chilli Sauce
  • Grated cheese for topping, cheddar or mozzarella

Method:
  1. Cut chicken into strips, cook in oil with fajita seasoning for approximately 10 minutes and remove from pan.
  2. Gently fry the sliced onions and peppers.
  3. Wrap chicken and onions and peppers in tortillas and lay close together in an ovenproof dish until all ingredients are used. Any extra onions and peppers can go on top.
  4. Cover with jar of Tomato and Chilli sauce.
  5. Cover with grated cheese.
  6. Cook at 180°C, 350°F or Gas Mark 4 for approximately 30 minutes.
