Curried Coconut Soup
A lovely creamy soup with a kick
Ingredients:
- 1 medium onion
- 250g lentils
- 2 cans coconut milk
- 1 Jar Korma Curry Paste
- 2 tbsp Hot Mango Chutney
- 1 Stock cube or stock pot
- 200ml hot water
- Fresh Coriander
Directions:
- Chop the onion up into small pieces and fry off in a little olive oil for 2 mins
- Add the curry paste and let it simmer for 3 mins
- Add lentils and mix in, leaving for a few minutes
- Add the coconut milk, mango chutney, stock cube and water. Mix and simmer for 30 mins
- Blend with a hand blender in the pan and add some coriander if you want to.
- Serve and enjoy!
