Coconutty Coronation Chicken Sarnies
For a healthier option use Reduced Fat Coconut Milk and turkey
Ingredients:
- 500g Cooked Chicken
- 50g Mayonnaise
- 50g Coconut Milk
- 75g Eswatini Hot Mango Chutney
- 1 tsp curry powder
- 1 Lime (zest and juice)
Method:
- In a large bowl, whisk together all the mayonnaise, hot mango chutney, curry powder, lime zest and juice. Add seasoning to taste.
- Add the cooked chicken, toss with the dressing until well coated. Cover and chill until serving.
(Use reduced fat coconut milk for a healthier version).
