Mango & Pineapple Glazed Halloumi Skewers
A really easy meal, ideal for busy evenings and barbecues
Ingredients: (Serves 2):
- 1 block halloumi, cut into large chunks
- 2-3 tbsp Mango & Pineapple Jam
- 1 tbsp olive oil
To serve:
- Salad of your choice
- Optional: True Origin Balsamic Reduction (of your choice)
- Optional: Zaytoun olive oil
Method:
- Soak bamboo skewers for 30 minutes before hand. Thread the halloumi onto skewers.
- Make the glaze. Warm the jam slightly and mix with olive oil.
- Grill or pan-fry on medium-high heat until golden and then brush halloumi with the glaze and cook for another 1-2 minutes until sticky.
- Plate with a salad of your choice and finish with a drizzle of balsamic glaze and olive oil if you like.
Can also be cooked on a barbecue
