Bread & Butter Pudding
Add some Cinnamon to make it a bit more interesting
Ingredients:
- 6 slices of beer bread of your choice cut into triangles
- 400ml of coconut milk
- 350g sugar
- 4 eggs
- 1 tsp cinnamon
- 1 tsp vanilla
- Handful of raisins
- Butter, softened
Directions:
- Heat oven to 180 C
- Mix together the eggs, coconut milk, vanilla, cinnamon and sugar.
- Spread the bread with butter and evenly place in a medium sized oven proof dish placing a handful of raisins between layers of bread, do not put on the top layer or they will burn in the oven.
- Pour mixture over the bread and bake in oven until brown.
- Remove from the oven and allow to cool slightly to set and then serve.
