Sweet Potato & Coconut Curry Soup
A delicious warming vegan soup
Ingredients:
- 1 onion – chopped
- oil
- 2 garlic cloves – peeled and crushed
- 1 jar Medium Curry Sauce
- 1.5kg sweet potatoes –peeled and chopped
- 400ml coconut milk
- Stock (vegetable or chicken)
Method:
- Fry onion in oil with garlic for 10 minutes
- Add sweet potatoes, medium curry sauce, coconut milk and stir
- Boil and simmer for 20 minutes
- Liquidise, and if too thick, add water as required and salt and pepper
