Tomato & Bean Soup
A winter warmer with a kick of heat
Ingredients:
- 2 tins chopped tomatoes
- 2 tins red kidney beans, drained and rinsed
- 500ml chicken stock
- 2 garlic cloves, crushed
- juice of one large lemon
- 2 tablespoons of Tomato & Chilli sauce
Method:
- Put the tomatoes, beans and stock in a food processor (in batches in necessary) and pulse briefly until coarsely chopped but not smooth.
- Transfer into a saucepan and add the crushed garlic, lemon juice and hot chilli pesto and heat to just below boiling.
- Thin with boiling water if necessary. Season, then serve.
