Spicy Bean Taco Soup (Vegan)
Using Tomato & Chilli sauce from Meru Herbs in Kenya
You will need:
- ½ jar Meru Herbs Tomato & Chilli Sauce
- 150g of tomato passata
- 1 onion, chopped
- 1 clove garlic, crushed
- 1 tin of haricot beans
- 500ml vegetable stock
- 2 teaspoon cumin
- Juice of half a lime (1 teaspoon)
Method:
- Fry the onion for 3-4 minutes until golden
- Add garlic, cumin, lime juice, passata and cook for 1 minute.
- Stir in the stock, Tomato & Chilli Sauce and beans and bring to the boil. Reduce heat and simmer for 10 minutes.
- Garnish with sweet corn, or sliced spring onion and serve with tortilla chips and some grated cheese
