Sweet Potato and Lentil Curry (Vegan)
Warm hearty food
Ingredients:
- 1 diced onion
- 1 diced clove of garlic
- 1 large, chopped carrot
- 1 chopped sweet potato
- 200ml of coconut milk
- ½ jar Medium Curry Sauce
- 1 teaspoon Swazi Fire Flamin’ Hot Chilli Sauce
- 340g lentils
- 600ml vegetable stock
- 400g Kilombero Rice
Method:
- Heat onion and garlic, stirring until browned
- Add ½ jar Medium Curry Sauce and 1 teaspoon Swazi Fire sauce
- Add the chopped carrot and sweet potato
- Add 340g of lentils and 600ml vegetable stock. Bring to the boil and simmer for 25 minutes
- Cook 400g Kilombero Brown Rice by following the preparation instruction on the packet
