Tuscan Chicken
Use the same amount of cauliflower for a vegetarian option
Ingredients:
- 1 Onion
- 3 Cloves of Garlic
- One tin of sundried tomatoes
- 400g chicken breast (400g cauliflower for veggie option)
- 100g baby spinach
- 150ml Chicken stock
- 150ml Double cream
- 2 tsp True origin sundried tomato mustard
- 1 tsp oregano
- 60g Parmesan
Method:
- Fry chopped onion for a few minutes in a little oil, add in chopped sundried tomatoes and crushed garlic, add chicken (or cauliflower) and fry until cooked through.
- Stir in spinach and let wilt and then add the stock and cream, stir in mustard and oregano.
- Let simmer for 10 minutes then add in parmesan and season to taste.
- Serve with your favourite pasta and enjoy.
