Yellow Chicken Curry with Kilombero rice
Full of flavour - Remove chicken for a vegan alternative
You will need:
- 1 onion
- vegetable oil
- 60g Yellow Curry Paste
- 400g chopped and peeled tomatoes
- 200g sliced sweet potato
- 400g chicken breast or thigh
- bed of Kilombero Rice to serve
Method:
- Fry onion petals lightly in vegetable oil until soft, then add the yellow curry paste and fry lightly.
- Add the tin of chopped tomatoes, and the sweet potato and simmer for 10 minutes.
- Flash fry the chicken then add to the sauce and simmer for 10 minutes.
- Remove from the heat and let stand for 5 minutes before serving with Kilombero rice (cooked as per packet instructions).
