From Seed to Empowerment: The Sunshine Nuts Story

When most people think about cashews, they picture a delicious snack. But behind every handful is an entire world of farmers, families, and communities whose futures can shift dramatically when companies choose to invest in origin. Sunshine Nut Co. was founded on the belief that great food can spark great change, and that the most powerful transformation happens closest to the source.  This is the story of how a simple idea brought hope to thousands in Mozambique and created a blueprint for what ethical, origin-based business can truly look like.



A Seed of an Idea in the Heart of Mozambique


When Sunshine Nut Co. founder Don and Terry Larson moved from Pennsylvania to Mozambique in 2011, he saw a country rich in natural resources with its fertile soil, abundant sunshine, and one of the world’s best climates for cashews. But he also saw something else: Mozambique’s smallholder farmers were producing world-class cashews, yet the lack of local processing forced them into exploitative selling practices. Farmers grew a premium product but received minimal income.  Communities had resources but no path toward economic independence.


Where many saw risk, Don saw potential. The cashew industry, once thriving, had collapsed due to decades of exporting raw nuts for processing elsewhere. Mozambique had become a supplier of unprocessed resources rather than a creator of finished goods meaning jobs, profits, and value were being exported too.  Don believed the solution was as straightforward as it was radical: process the cashews at origin, create jobs at origin, and reinvest profits at origin.


So, the Larsons built Sunshine Nut Company using a model that turns locally grown cashews into finished products and butters in the same communities where they’re harvested and therefore creating jobs, dignity, and opportunity for the people who need it most.  Forming Sunshine Nuts was never just a business decision. It was a way to combine Don’s passion for operational excellence with a purpose that would outlive him. Today, Sunshine Nut Co. roasts, packages and ships cashews and cashew nut butters directly from Mozambique, resulting in fresher flavour, a smaller carbon footprint, and life-changing impact for farmers, families, and factory workers.

Rebuilding an Industry from the Inside Out


The global cashew industry is deeply complex. Nearly 70% of the cashews imported into Europe travel from Africa to Vietnam or India for processing, raising serious concerns over prison labour, child labour, and fraudulent sourcing. Most African-grown cashews are exported raw, leaving farmers with only pennies while value and jobs shift overseas. Sunshine Nut Company was founded to break this cycle—by doing something no one expected: building a world-class cashew roasting facility in Mozambique, run almost entirely by local employees. This wasn’t charity; it was empowerment through enterprise.


From tree to table, their entire process happens in Mozambique. Smallholder farmers harvest the cashews by hand, and within hours the nuts arrive at the Sunshine Nut Co. facility for processing, roasting, seasoning, and packaging in a world-class, peanut-free environment. Finished products are shipped directly to global markets, eliminating middlemen and keeping economic value where it belongs—at the origin. This vertically integrated model reduces environmental impact, minimises waste, and creates stable employment in communities where opportunities were once scarce.


By training local workers in food safety, equipment operation, quality control, and leadership, the company built a team capable of producing some of the highest quality cashews in the world. Their eight year record of FSSC 22000 certification reflects this commitment to safety and excellence. They also invest in farmer training, orchard restoration, and long-term development, strengthening entire communities and ensuring a transparent, ethical supply chain rarely seen in the global nut industry.


Sunshine Nut Co. continues to challenge the misconception that food made in Africa is somehow lower quality. Their facility meets the highest international standards, and their cashews consistently outperform global competitors. Yet despite industry-wide hurdles, their motivation remains unwavering. Every day they witness transformation, farmers earning fair incomes, children accessing education, families regaining stability, and communities rebuilding hope. As founder Don often says, “The cashews are a vehicle for something greater; they transform people’s lives.”  Though his background is in automation and robotics, his greatest joy has been turning machines off to create jobs for people.

Alistair has been a True Origin director since 2020, having spent most of his career within the food industry across a range of commercial, marketing and management roles. With 30 years in management and 25 working for food businesses including Divine and Traidcraft, he has brought a breadth of experience across several categories including hot beverages, snacks, chilled, frozen as well as enjoyable spells in confectionery and wines. Alistair has enjoyed working in fair-trade where every sale ensures fair prices and additional benefits to farming communities and has had the privilege of visiting several producer groups in Chile (vineyards and honey co-operatives), and Ghana (cocoa farmers as well as tropical fruits). “Since joining the board of True Origin in 2020 I’ve seen firsthand how resilient and adaptable the team are when faced with the challenges of global disruptions, ever changing market conditions, and the logistics of shipping products from east and southern Africa to Paisley.
